Erik’s El Guapo Taco

Recipe By: Erik Serving Size: 3

Ingredients:

• 8 corn tortillas
• 12 ounces butter beans
• 1 cup rice
• 1 cup lettuce
• hot sauce, to taste
• 1 1/2 cups cheddar cheese
• 1 tablespoon olive oil

Directions:

Chop lettuce.

Start rice per rice instructions. Halfway through cooking heat up butter beans in can juices. Preheat skillet at medium heat.

When beans are ready pour olive oil in skillet and place corn tortilla with a pinch of cheddar cheese. When cheese has melted remove from skillet and add another tortilla.
